The health benefits of plant based diet.

 

I'm going to share a story to explain why I care so much about nutrition and promote a plant based diet.

I was raised by a single mother. She raised 2 little girls and worked full time. We were poor. Because of her lack of money and free time she practically lived off of fast food.

While in college,  my mother had her first triple bypass surgery. Meaning, many more surgeries followed. She was only 39. This had a profound impact on me. I was determined to not wind up in poor health like my mother. I went to the doctor for a blood test and, lo and behold, I already had high cholesterol.  I was told it was hereditary.

I signed up for a nutrition class and decided this was the perfect time to stop eating meat.  I thought this would be the answer. I never gave up fish or dairy.

I eventually wound up living in New York and had been on a pescetarian diet for years. I went to check my cholesterol and it was even higher. I couldn't believe it. I was a serious athlete. I ran 7 days a week and weighed 120 lbs. How could this be? My doctor told me I had to be on statin drugs. I refused. After some research, I decided that I needed to add Niacin to my diet and eat healthier. Nothing worked. I finally caved to the statin drugs. Lipitor specifically. I was on it for 10 years. I felt like I had no choice. Over time I realized that it was effecting my memory...big time! I also had joint pain. Because of this, I gave up the statin drugs.

Years and years past. I had my cholesterol checked again. I was horrified. It was 378.  I had a heart scan which showed plaque build up in my arteries as well. I was on a dangerous path. My doctor told me that I had no choice but to go on statins. I felt like I was against a wall. I didn't want to take the drugs. Being older and wiser I knew exactly what I had to do. I was not joking around. I went hardcore vegan.

2 months later I went in for a blood test. I was driving when my boyfriend called to give me the results. When he said it was 219 I had to pull off the road. It worked! I was overjoyed. I had learned how to save myself. My cholesterol dropped 159 points. That is the power of plants!

I am torn on whether to mention this book because this is based on years of research and they did conduct animal studies before the human studies.
